  1. this might be a crowd pleaser, if you still have it in your card file, your recipe for cabbage rolls.

and we both know the turkey casserole recipe. should we share it with others?

would be nice to have scrap turkey at home, don't like doing it with tuna. the cream of celery, and/or cream of mushroom soup helps alot.

  3. About a month ago, I sent my cabbage roll recipe to Ryan, so I'll just copy that off for you. There's a lot you have to know about making cabbage rolls, so I'll try explain it all for you. You'll need one medium large cabbage to make about 100 rolls.

    CABBAGE ROLLS

First of all, make the goop....as follows, cook 1/2 cup raw rice in 1 cup water and 1/2 tsp salt for 15 minutes. Bring to boil over high heat, then reduce to low, and keep the lid on, don't peek. Or use a rice cooker, if you have one. When cool, add 1/2 lb. ground beef and 1/2 lb. sausage meat, 1 medium size onion, chopped fine, 1 tsp salt and 1/2 tsp. pepper. I also chop fine about 6 or 8 strips of bacon and add that to the goop. Mix well, and set aside while you prepare your cabbage leaves.

First of all. decore your cabbage very well, using a sharp pointed knife, remove the entire core, You'll end up with a hole in the cabbage 2-3 inches deep and about an inch and a half in circumference, this releases the leaves. Next bring a large pot of water to the boil, and insert the whole cabbage. Let it boil away until the leaves are softened and you can remove them to cool, using a pair of tongs. Then, cut the leaves into pieces, 4 x 4 makes fairly small cabbage rolls. Chuck the heavy veins, (or keep them for soup), they're too hard to roll. Put a heaping tbsp of the goop at one end of the leaf portion and roll up, tucking in the ends. Place in layers in baking dish, layering each with 1/4 cup of Italian tomato sauce, also sauce on bottom of dish. Bake covered at least 1-1/2 hours, and longer doesn't hurt. 350 degrees.

  4. I do mother's meatloaf in an 8 x 8 pan, and increase the sauce, cuz we LOVE lots of it.

    3/4 cup oatmeal
    1/2 cup milk
    1 egg
    1 chopped onion
    1/4 tsp. sage
    1 tsp. salt

Mix & press into 8x8 dish (Corningware). Cover with sauce
    SAUCE
    1 cup ketchup
    1/3 cup brown sugar
    1 tsp. nutmeg
    2 tsp. dry mustard (powder)

Bake at 350° about 50 minutes. I like to serve this with cheese scalloped potatoes (mix). They take about the same time in the oven.

  5. Much as i love the original recipe, i've enjoyed Linda's version also, ever since she came up with it...i've always thought of it as 'meat cake', and definitely support the extra sauce to meat ratio. What a bunch of food nerds are we.
